CPSU Recipe: Pear and chicken salad

This is a simple salad that’s not short on taste, it’s an easy lunch or side dish.  You’ll want to prepare this salad right before serving so it’s as fresh as possible. If you’d like to contribute a recipe email it to along with a decent sized photo of your creation!

Pear and chicken salad


  • 2 pears
  • 2 smoked chicken breasts with skin removed
  • ½ cup of shaved parmesan
  • 1 packet of baby spinach
  • ¼ cup of toasted pine nuts


  • 1 lemon
  • ¼ cup of lemon infused olive oil
  • Cracked pepper In a large bowl place the spinach leaves.


Cut the chicken into bite sized pieces and add to the bowl along with the thinly sliced pear.  Add the dressing, parmesan and pine nuts. Simply toss the salad and serve with crusty bread. To make it extra special, add a handful of tarragon leaves.
